| Our
state of the art, computer controlled, roasting and packaging
system is made by Petroncini, an Italian manufacturer of the
finest roasting equipment.
Here is
a brief description of our roasting process:

The batch hopper is filled with our award winning, hand picked
100% Arabica green coffee beans;
· The automated roasting system transfers the green
beans to the roasters holding hopper until the roaster reaches
the pre-assigned roasting temperature for that particular
roast at which time the computer releases the green beans
into the roaster;
· The roaster tumbles the green beans for a pre-assigned
time for that particular roast (visually checked and verified,
of course, by our trained roasting specialist):
· After the roasting process is complete, the now roasted
beans are dropped into a cooling vat where a vacuum cools
the beans quickly to lock in the flavor;
· The roasted beans then go through a final de-stoning
process (the beans have already been washed and de-stoned
prior to roasting) on their way to a holding hopper where
they are stored short term while the packaging order in inputted
(either whole bean or ground and package size);
· If a whole bean order – the roasted bean proceed
straight to the packaging and distribution center. If a ground
bean order – the roasted beans are sent automatically
to the systems grinder, which grinds to a predetermined level,
and then to another holding hopper awaiting packaging and
distribution.
